Hatch Chili Pepper Salsa



My family Loves Salsa!!  And this is the best time of year to make up a batch and can them.  

Recipe:

30 tomatoes peeled and diced,   I used fresh red,orange and cherokee heirloom tomatoes.  Bought them at the farmers market for 12 dollars 

3 green bell peppers diced

10 hatch chilies chopped with seeds

6 large Jalapenos diced with seeds

10 garlic cloves minced 

2 bunches of cilantro chopped 

2 cups apple cider vinegar 

3/4 cup sugar

2 limes juiced

Salt and pepper.  


Add all veggies in huge bowl and stir until mixed well.  Sprinkle with salt and pepper about 4 tablespoons of each.  I use sea salt flakes. Pour vinegar in bowl add sugar, garlic and lime juice wisk together and pour over veggies.  Mix well..  Cover and let rest for 1 hour.  Scoop into hot Mason Jars add a pinch of salt tighten lid and place in boil bath canner for 20 minutes,  remove and place on dish towel to seal. 25 jars all sealed.  Bring on the chips...
