Lemon and Garlic Baked Cod with a Traditional Greek Salad


Hope this one turns out as good as it sounds in my head.  Cod really doesn't have much flavor.  Dipping the fish in a lemon mixture prior to dredging in flour with great spices will give it an added burst of flavor.  Then adding lots of garlic to remaining lemon mixture, drizzling over fish just before baking will make it fantastic. 


Recipe;

4 to 6 pieces of Cod I have 2 small filets and 2 Cod Loins

6 garlic cloves peeled and minced

Fresh parsley about 1/3 of a cup chopped

Juice from a lemon. About 4 tablespoons

Oil oil 4 tablespoons 

2 tablespoons melted unsalted butter

Dredging:

1/3 c flour. I  love using  Gold Medal Wondra flour. Comes in a blue can...  super fine flour

1 tsp coriander

1 tsp paprika

1 tsp cumin

Pinch of salt and 2 of pepper


Nows a good time for a beverage,   white wine or a nice Gin and Tonic 🍸🍹

Preheat over to 400.   Mix lemon juice olive oil and melted butter. In another bowl mix the flour and spices.  Pat fish dry with paper towel,   dip fish in lemon juice mixture then dip in flour.  Heat 2 tablespoons olive oil in oven proof frying pan,  add fish to fry pan and cook to add a little color just a couple minutes on each side, remove from heat.  In the remaining lemon mixture add the garlic and drizzle over fish.  Bake in oven for about 10 minutes.  Remove from oven and sprinkle chopped parsley.  Note:  Grab pot holder when moving pan so you don't burn yourself  😁πŸ”₯

Traditional Greek Salad

I  learned something interesting about this Salad  while researching.   There isn't any lettuce which shocked me a bit but I am in love because the I think the best part of Salad is the veggies that are added to lettuce.   So here's the recipe 

1 med red onion sliced in half and slices thinly

3 med tomatoes,   I am using a heirloom and beefsteak tomatoes cut into wedges 

1 cucumber cut thick slices 1/2 inch

1 green pepper cut into rings

1 cup pitted kalamata olives 

Feta cheese to your liking

4 tablespoons olive oil 

2 tablespoons red wine vinegar

1/2 tablespoons dried oregano 

Place all cut veggies in large bowl,  add olives  season lightly with kosher salt just a punch and bit of dried oregano.   Pour olive oil and red wine all over salad gently toss add feta and more oregano.   Serve as a side dish or main summertime meal.
