Pork Chops Stuffed with sausage, butternut squash, sauteed spinach and cheeses..
Never tried making these before..but it was a 2 pack at grocery store so I said why not...
So cutting a pocket in a pork chop isn't easy. Must have a sharp knife that doesn't cut your hand.. so in the side of chop. Slice a pocket to the bone don't cut all the way thru. I sauteed a half a pound of fresh pork sausage, added 1/2 a chopped onion, and cup of chopped butternut squash, cooked until they browned lightly. Just eye ball it...or about 10 minutes. add 1 teaspoon chopped garlic, salt and pepper to taste and 2 handfuls of spinach cooked until wilted. Added 2 tablespoons butter without salt 4 ounces cream cheese, grated parmesan cheese. Mixed and set aside to cool slightly. Take your pork chop and stuff with spinach mixture, secure with toothpicks and brown each side for 4 minutes in a over proof pan...once browned place in 375 degree over for 25 minutes...2 Big things to remember Remove the toothpicks before serving and Do not grab handle of hot pan. Just saying 😌
