Spiced Chicken Stuffed Shells with Garlic Bread


I just love pasta!!  One day I will make my own fresh pasta;  for now I will rely on store bought.  My combination of spices may seem a bit odd but I can say they worked very well together.  This dish tastes even better the next day.

Recipe:

1 box of shells for stuffing,   I wanted manicotti shells but the store didn't have them so I found a ell shaped shell that would work.

1 pound of ground chicken 

1 medium onion chopped small

8 oz of portabella mushrooms diced

1 package of spinach

1 clove of garlic minced 

1 teaspoon cinnamon

1 teaspoon red pepper flakes 

8 oz of ricotta cheese

2 cans of fire roasted tomatoes 

2 teaspoons Italian Seasoning

1 clove of garlic crushed 

1/2 cup of half and half 

Salt and pepper to taste 

1 bag of mozzarella cheese shredded. 8 oz


Start with a bowl of warm water,  place you shells in to start the softening process while you are getting the filling and sauce finished.


Filling

Cook the chicken in fry pan with a bit of olive oil,  once chicken is done transfer to side dish.  Add onions and mushrooms sautee for 5 minutes add garlic cook for additional 2 minutes.   Return cooked chicken to pan, add spinach, cinnamon and red pepper flakes. Cook until spinach is wilted.  Transfer to bowl let cool for 10 minutes add ricotta cheese and combine.  Set aside.

Quick Vodka Sauce:

In saucepan add 2 cans of fire roasted tomatoes,  Italian Seasoning and garlic.  Simmer for 10 minutes,  cool slightly and pour into blender and add half and half, (be very careful with lid of blender so you don't splash sauce on ceiling)  not saying this happened today 😉   but it has happened 😁 pulse for 2 minutes. 

Time to stuff the shells...remove shells from water and pat with paper towel.  Preheat oven to 400, pour about a cup and half of sauce into baking dish,  I used a 9 x 11.  This is the messy part,  shell in one hand and use your other to stuff shells with filling mixture.  Once stuffed put in sauced pan, continue until you used all shells or run out of filling.  Pour remainder of sauce over stuffed shells cover with foil,  bake 20 mintues.  Remove foil cover shells with mozzarella cheese and bake 10 more minutes.   Let rest 5ish minutes before serving.
