Spinach Caprese Stuffed Portabella
This dish is great for a meatless meal. Lots of flavors to satisfy your taste buds. I love everything about this one.
Recipe:
4 large portabella mushrooms cleaned
1 oz package spinach sautéed
1 cup of shredded mozzarella cheese
1 package of grape tomatoes cut in half
Fresh mozzarella cut into 1/4 inch pieces
Garlic powder to taste
Pepper to taste
Balsamic reduction this can be found in with the varieties of vinegar at grocery store.
Preheat over to 425, cover baking sheet with foil. Place mushrooms on baking sheet, sprinkle with garlic powder, add 1/4 cup of cheese to each mushroom. Evenly divide cooked spinach between the mushrooms, spinkle with garlic. Place tomatos on top of spinach and add the mozzarella. Sprinkle with pepper.
Bake for 10 to 15 minutes, drizzle Balsamic Reduction over and serve warm.
