Broccoli Cheese Soup with a little Bacon
Its soup and stew time of year. This soup is easy to make and warms you to the bone. Added a little bacon on top. Hope you enjoy as much as I do.
Recipe:
2 tablespoons unsalted butter
1 medium onion chopped small
1 garlic cloves minced
3 cups of fresh broccoli cut into bite size pieces
2 cups of chicken broth
1 block cream cheese cut into 1 inch pieces
2 cups shredded sharp cheese
1 small block of Valetta cheese or half of large block cup into 1 inch pieces
3 cups whole milk
Pepper to taste
1/2 cup water
2 tablespoons corn starch
In a stockpot melt butter, cook onion and garlic for 5 minutes. Add chopped broccoli and chicken broth simmer for 30 minutes on medium low heat until broccoli is tender. Remove from heat to add cheeses and milk. Stir until well blended. Return to heat on low for 20 mintues. Mix corn starch and water add to soup and stir. Simmer for additional 5 minutes. Serve warm.
