Chicken Lasagna with Spinach Ricotta Cheese



 

Wanted to make a noodless lasagna,  so this is my attempt.  Above is ingredients needed to make.  Note:  you do not need the large container of spinach or ricotta I only used half for this recipe saving the other half for another dish later in the week.


Ingredients:

1 package of boneless skinless chicken breasts

1 jar of your favorite sauce

1 can of fire roasted tomatoes 

1 package of baby spinach 

1 small container of ricotta cheese 

1 package of sliced provolone cheese

2 cups of shredded mozzarella cheese 

2 eggs

1/2 cup of grated parmesan cheese 

Olive oil 

Seasonings: Italian Seasoning,  Garlic Powder,  Basil, oregano, salt pepper to taste.

Start by sautéing the baby spinach in frying pan..I added Olive oil and teaspoon of garlic first.


When finished set aside.


Next slice the chicken breasts in half. 


 

Cover with parchment paper and use a meat mallet to flatten each piece to about a quarter of inch. Note if you don't have Mallett you can use a can of veggies or a rolling pin.
Season with salt and pepper on both sides


Heat Olive oil in same frying pan you used for spinach, add chicken and cook about 4 minutes per side until slightly browned,  you will have to cook in 2 batches.



 Mix half the sautéed spinach with ricotta cheese,  add 2 eggs,  grated parmesan cheese,  3/4 cup of mozzarella cheese,  Italian Seasoning, Garlic Powder and salt and pepper 


Final step before assembly,  pour sauce in bowl add can of fire roasted tomatoes.  Garlic Powder,  Italian Seasoning, Basil and oregano.  Stir to mix


Now fun part let's put this all together,  first add sauce to bottom of baking dish,  add 3 pieces of chicken.

Next layer is Spinach Ricotta Cheese

Layer 6 slices of provolone cheese on top


Repeat layers again, sauce, chicken, spinach and Ricotta cheese, provolone sauce,  finally cover all with shredded mozzarella cheese. 


Place on foil covered baking sheet and cook at 350 for 35 to 40 minutes.  I hope you like it as much as me....
