Tuscan Shrimp

 


This recipe is one of my new favorites...I love Tuscan chicken,  so I thought about changing it up a bit with Shrimp.  I did not serve with pasta but feel free,  zoodles make a nice low carb option.



Ingredients:

16 large shrimp peeled and deveined  🦐🦐

2 tablespoons butter 🧈 

2 tablespoons chopped basil 

2 cloves of garlic roughly chopped

Small package of spinach stems removed and choppedπŸ₯¬

1/2 pint of grape tomatoes πŸ… 

Olive oil

1/4 cup of heavy cream πŸ˜‹ 

1/2 of shredded parmesan cheese πŸ§€   


Place fry pan on stove on high heat add about tablespoon of olive oil and butter.  


Add shrimp sprinkle with salt and pepper and brown on each side.


Remove shrimp set aside and keep warm.

Add garlic and  chopped basil stir and cook for a minute or two.

Almost done.   Toss in tomatoes, spinach, cream, cheese and shrimp. Stir and cover pan turn off heat and let rest for 10 minutes.
