Ratatouille with Sweet Italian Sausage


Another easy summertime recipe.  You can make this with or without sausage.  If you prefer beef it works too.

Ingredients:

2 yellow squash sliced thin 

2 zucchini sliced thin 

4 roma tomatoes sliced thin 6 slices per tomato

1 pound sweet Italian Sausage  or ground beef.  Optional

1 med onion chopped

1 med red pepper chopped

1 large can of crushed tomatoes 

3 garlic cloves minced 

12 basil leafs sliced thin

4 tablespoons chopped oregano 

4 tablespoons chopped parsley 

1/2 tablespoons thyme

4 tablespoons Olive Oil

Salt and pepper.  2 pinches of pepper and 1 of salt.





Recipe:

In medium fry pan cook Sausage or beef until browned.  Drain return to fry pan..  Add onion and pepper and cook for 3 minutes.  Add can of crushed tomatoes, 2 of the minced garlic cloves,   4 of basil leaves, 2 tablespoons oregano and parsley.  Salt and pepper.  Simmer for 10 mintues.   Remove from heat.  Alternate a piece of squash, zucchini and tomatoes.  See before cooking picture.   Once pan is full.  Mix together remaining Seasonings with 4 tablespoons olive oil and drizzle over top.  Bake foe 40 minutes covered and 20 minutes uncovered.

You can add mozzarella cheese 🧀  if you wish.  Enjoy
