Easy Cabbage Soup with Ground Beef

 


Love the Fall.  It's soup, stew and chili weather.  This is my version of the Cabbage Soup people use for diet.  Trust me it will cleanse the system 🤣  this one is super easy to put together; you can cook on medium and its ready in about 2 hours; you can speed it up by cook on high.   Or toss everything in crock pot 8 hours on low.


Ingredients:

1 large can of diced tomatoes 

1 packet on onion soup mix

1/2 head of Cabbage chopped

2 stalks of celery sliced thin

1/2 bag of baby carrots chopped

1/2 red and green pepper diced

1 bunch of kale chopped

1 large onion sautéed in 1 tablespoon of butter 

1 pound of lean burger cooked

About 3 cups of water

Salt and pepper to taste


   Note: you can omit for a veggies version.  You can add just about any cooked beef,  chicken, or pork.


In a large stock pot add all ingredients stir.  The liquid level should be about inch below the veggies.
