Summer Corn and Tomato Shrimp Scampi accented with Shredded Basil and Lemon Zest

 let's gather the ingredients.....


10 cloves of garlic peeled 
1 pound of peeled deveined shrimp 
1 lemon zested and squeezed 
1/4 cup White Wine 
2 ears of fresh corn 🌽  cut from the ears
1 pint of grape or cherry tomatoes sliced in half
3 tablespoons of olive oil 
5 tablespoons butter
5 or more to taste basil rolled and sliced
Salt and pepper 

Mix 2 tablespoons Olive oil with 2 cloves minced garlic.  Set aside no more than 1 hour.   In med size fry pan add tablespoons olive oil and 1 clove of sliced garlic.   Toss in tomatoes and corn.  Sauté for 4 minutes. 


Remove to boil keep warm.   Add butter and rest of sliced garlic and toss in shrimp. Cook 2 minutes per side on high 


Add lemon juice and 1/4 cup White Wine.  Stir add corn tomato mixture stir again.  Sprinkle with Basil and Lemon Zest.
Serve over pasta or enjoy with crispy bread.
