Bacon Wrapped Venison Meatloaf stuffed with sauteed onions, spinach, prosciutto and provolone cheese

  Saw this on MeatEater hunting show and made a few tweaks.   You can use regular ground beef in place of the venison tastes almost as good.  I usually put this on smoker at 225 for 2 hours love using hickory as my smoke flavor,  or you can bake in oven at 375 for 1 and 15 minutes.  If you bake in over put loaf on a foil lined baking sheet.   For the last 15 minutes of cooking flip  meatloaf from loaf pan and bake on baking sheet at 425 to crisp up bacon. Sauteed Kale & Onion Sweet Potato Pie

  Something different and new.  Love all these ingredients and thought why not layer them up in a pie dish.  So here goes.   Ingredients: 4 sweet potatoes peeled and sliced 2 onions sliced 1 red and 1 yellow 2 cups of kale chopped  4 tablespoons olive oil  1 pound bacon cooked and crumbled 1 cup shredded swiss cheese  1 cup shredded pepper jack cheese 3 eggs 1/2 cup milk or half and half  1/2 a seed of fresh grated nutmeg  Pinch of salt and pepper Recipe; Place sliced sweet potatoes in microwave safe bowl,  cover with water and microwave for 10 minutes.  Remove from oven drain water off and cool.   In frying pan add 2 tablespoons olive oil and sautee the onions until tender, when done remove from pan and let cool.  Add additional 2 tablespoons of olive oil to fry pan and add kale with pinch of salt and pepper sautee until kale is wilted.   Mix eggs with milk and fresh nutmeg.   Now time to ass...

Hearty Tuscan Bean Sausage and Shrimp Soup

 Nothing better that a nice hot soup on a cold and rainy Sunday.   This one is super easy to make.  Hardest thing is cooking the sausage and cutting it up. Recipe: 1 pound of sweet Italian sausage cooked and sliced. 1 pound of shrimp peeled and sliced in half  2 cans of butter beans drained 2 can of cannellini beans 1 can of sliced potatoes  drained 1 can of fire roasted tomatoes  4 cups chicken broth  1 package baby spinach  1/2 cup chopped fresh basil  2 tablespoons minced garlic  Pepper Combine all ingredients in stock pot cook over medium low heat until shrimp has turned pink and done about 20 to 30 minutes.   Serve warn with shredded parmesan and hot bread.

Crock Pot Homemade Tomato Sauce with meat..

 Today I decided to make some homemade tomato sauce with meat.  Used my crock pot for ease. Recipe: 2 pounds of cook ground meat cooked,  you can use ground beef,  ground chicken or venison.  I used ground chicken today. 2 cans of fire roasted tomatoes  1 can of tomato paste  2 cups water 1 medium onion chopped  1/2 cup shredded carrots  2 Tablespoons Italian Seasoning  1 teaspoon onion powder  1 Tablespoons oregano  3 Tablespoons minced garlic  2/3 cup of parmesan cheese  1 teaspoon sugar Pinch of salt and pepper  Mix all in crock pot and cook on low for 6 hours,  stir occasionally. 

Quick Rustic Cheese Tortellini Sausage Soup

I just love the fall.   Great time for soups, stews and chili.  This recipe is a quick weeknight soup prep time is 10 to 15 minutes and cooking time it 30 minutes.  Throw this one together when you get home from work. Recipe: 1 box of beef broth 32 oz 1 can of fire roasted tomatoes  1 small package of spinach chopped 1 medium onion chopped  Half pound of mild Italian sausage  1 pound of hot Italian sausage  3 cloves garlic crushed  1/2 cup of fresh basil chopped  1 package of cheese Tortellini 10oz  Into stock pot pour broth, tomatoes, 2 cans of water, chopped spinach, chopped onion and crushed garlic bring to a simmer.  In a fry pan cook the sausage until done.  Drain and add to  broth mixture. Simmer for 15 minutes until spinach has wilted. Add tortellini and basil cook for 5 addition minutes or until tortellini is soft.  Serve warm with shredded parmesan. 

Crock Pot Flank Steak Fajita Stack

  Well this turn out better than expected.  Every where I looked for recipes for flank steak was about marinating and grilled.   Why not the crock pot. So here goes.  Tender and tasty.  Recipe: A 2 pound flank steak 1 green pepper sliced into strips 1 red pepper sliced into strips 1 yellow pepper sliced in strips 2 medium onions sliced 2 tomatillos quartered 1 package of Fajitas seasoning 1 cup of beef broth or beer,  I used Modelo 🍺  Put steak in crock pot cover with veggies sprinkle season over top pour broth or beer over all and cook on low for 6 hours.  When time is up remove meat and shred with fork.  Drain juices off veggies and return meat to crock and stir together.  To make the stack: Start with a warm Street Taco flour tortilla and spread warmed refried beans, topped with shredded sharp cheese, meat and veggies next was a bit of lettuce, tomatoes, guacamole, sour cream and Jalapenos finally a squeeze of fresh lime.

Broccoli Cheese Soup with a little Bacon

  Its soup and stew time of year.  This soup is easy to make and warms you to the bone.  Added a little bacon on top.  Hope you enjoy as much as I do.   Recipe: 2 tablespoons unsalted butter 1 medium onion chopped small  1 garlic cloves minced  3 cups of fresh broccoli cut into bite size pieces  2 cups of chicken broth  1 block cream cheese cut into 1 inch pieces  2 cups shredded sharp cheese 1 small block of Valetta cheese or half of large block cup into 1 inch pieces  3 cups whole milk Pepper to taste 1/2 cup water  2 tablespoons corn starch  In a stockpot melt butter,  cook onion and garlic for 5 minutes.  Add chopped broccoli and chicken broth simmer for 30 minutes on medium low heat until broccoli is tender.  Remove from heat to add cheeses and milk.  Stir until well blended.  Return to heat on low for 20 mintues.  Mix corn starch and water add to soup and stir.  Simmer for addi...
