Braised short Ribs in a Red Wine Sauce with Smashed Potatoes with Garlic Parmesan Cheese

This recipe will make your house smell fantastic I been slow cooking them on the stove since 2 o'clock this afternoon. Recipe: 4 pound of beef short ribs 2 onions chopped 3 celery stalks chopped 1 bag of mini carrots  2 cups of beef stock 2 cups of red wine 2 tablespoons tomato paste  Olive oil,  salt and pepper,  garlic and fresh herbs  Add about 2 tablespoons of olive oil to Dutch oven, turn on medium heat,  season  ribs with salt and pepper.   Add to hot oil and brown on all sides transfer to plate.  Add garlic,  chopped onions, celery and carrots and saute for 5 minutes.   Pour in beef stock and wine.  Stir and return ribs to pan.  Cover with fresh herbs,  used parsley,  oregano,  basil and thyme.  Place in oven at 225 and simmer low and slow for 3 hours,   check often to make sure the liquid does not dry up,,  add water or more wine. Hatch Chili Pepper Salsa

My family Loves Salsa!!  And this is the best time of year to make up a batch and can them.   Recipe: 30 tomatoes peeled and diced,   I used fresh red,orange and cherokee heirloom tomatoes.  Bought them at the farmers market for 12 dollars  3 green bell peppers diced 10 hatch chilies chopped with seeds 6 large Jalapenos diced with seeds 10 garlic cloves minced  2 bunches of cilantro chopped  2 cups apple cider vinegar  3/4 cup sugar 2 limes juiced Salt and pepper.   Add all veggies in huge bowl and stir until mixed well.  Sprinkle with salt and pepper about 4 tablespoons of each.  I use sea salt flakes. Pour vinegar in bowl add sugar, garlic and lime juice wisk together and pour over veggies.  Mix well..  Cover and let rest for 1 hour.  Scoop into hot Mason Jars add a pinch of salt tighten lid and place in boil bath canner for 20 minutes,  remove and place on dish towel to seal. 25 jars all sealed....

Lemon and Garlic Baked Cod with a Traditional Greek Salad

Hope this one turns out as good as it sounds in my head.  Cod really doesn't have much flavor.  Dipping the fish in a lemon mixture prior to dredging in flour with great spices will give it an added burst of flavor.  Then adding lots of garlic to remaining lemon mixture, drizzling over fish just before baking will make it fantastic.  Recipe; 4 to 6 pieces of Cod I have 2 small filets and 2 Cod Loins 6 garlic cloves peeled and minced Fresh parsley about 1/3 of a cup chopped Juice from a lemon. About 4 tablespoons Oil oil 4 tablespoons  2 tablespoons melted unsalted butter Dredging: 1/3 c flour. I  love using  Gold Medal Wondra flour. Comes in a blue can...  super fine flour 1 tsp coriander 1 tsp paprika 1 tsp cumin Pinch of salt and 2 of pepper Nows a good time for a beverage,   white wine or a nice Gin and Tonic 🍸🍹 Preheat over to 400.   Mix lemon juice olive oil and melted butter. Braised Chicken Thighs with Wine

  Another new one for me,  here's what you need: Olive oil for cooking about 2 tablespoons  4 chicken thighs with skin 1 medium onion chopped 2 cloves of garlic minced 1 bottle of red or white wine 1 can of fire roasted tomatoes  1/2 cup of chicken broth 2 tablespoons tomato paste 1/2 cup kalamata olives Fresh herbs,   oregano,  thyme, and  parley  2 tablespoons of fresh basil chopped Pasta of your choice  Start by opening the bottle of wine,  pour yourself a glass and sip.  Chop up the onions and fresh herbs.  Open can of tomatoes,  measure 1/2 cup of chicken stock.  Heat 2 tablespoons olive oil in Dutch oven or large frying pan,   season chicken with salt and pepper place in pan skin side down and cook 4 minutes per side.  Remove from pan.  Add onions and garlic cook for 5 minutes,  add wine about a cup and pour yourself another glass 🍷🍷,  cook onions and garlic in wine for 10 mi...

Pork Chops Stuffed with sausage, butternut squash, sauteed spinach and cheeses..

 Never tried making these before..but it was a 2 pack at grocery store so I said why not... So cutting a pocket in a pork chop isn't easy.  Must have a sharp knife that doesn't cut your hand..  so in the side of chop. Slice a pocket to the bone don't cut all the way thru.   I sauteed a half a pound of fresh pork sausage,  added 1/2 a chopped onion, and cup of  chopped butternut squash,  cooked until they browned lightly. Just eye ball it...or about 10 minutes. add 1 teaspoon chopped garlic,  salt and pepper to taste and 2 handfuls of spinach cooked until wilted.  Added 2 tablespoons butter without salt 4 ounces cream cheese,  grated parmesan cheese.  Mixed and set aside to cool slightly.  Take your pork chop and stuff with spinach mixture,  secure with toothpicks and brown each side for 4 minutes in a over proof pan...once browned place in 375 degree over for 25 minutes...2 Big things to remember Remove the toothpicks...

Sweet and Sour Squash Salad..

 This is a great side dish for summers.  Simple to make and takes about 15 minutes to put together. Recipe: 1 zucchini, sliced thin 1 yellow squash, sliced thin 1 ear of corn roasted, cut off cob 6 spring onions chopped 1 celery stalk sliced 1/2 a red pepper chopped 3/4 cup apple cider vinegar  1/4 cup sugar 3 tablespoons  Ranch Dressing..the powder kind. Add all the chopped veggies to a mixing bowl.  In separate bowl mix the vinegar, sugar and powder Ranch dressing wisk together, pour over veggies stir and put in fridge  for a couple hours.  This is a nice side dish to take to outdoor parties..

Eggs Benedict

 I was terrible at poaching eggs until I found silicone egg poaching cups..  see picture I got the on Amazon just love them...Eggs Benedict is super easy to make.  You will need 2 eggs per person 1 English Muffin per person,   now when it come to meat you can use whatever you like.. I've made Oysters Rockefeller Eggs Benedict Sausage and even country ham.   Next you will need holenday sauce Knorr makes the best just follow directions on package.    Start by filling a pan half way with water and place on stove to boil next cook your  choice of meat,  spary the  cups with Pam crack egg and place cup in boiling water cover and cook until the whites are firm.  Remove from hot water.  Toast the English Muffin.  Assembly...place 2 toasted English Muffin on plate add meat spoon out poached egg and top with sauce.  Enjoy  Top is Oysters Rockefeller Eggs Benedict,  Bottom is Traditional Eggs Benedict
