Watermelon Avocado Salad

Here we are in the deep heat of Summer πŸŒ•πŸŒž,  and you know what is awesome this time of year Sweet Watermelon πŸ‰.    Not only is this a Low carb salad its also satisfying and  pairs well with grilled shrimp or fish.  Try my twisted version .   This recipe serves 2 Ingredients  1 cup of cubed watermelon  1 radish sliced thin 1 shallot diced or 1/4 of red onion diced 4 mint leafs πŸƒ  sliced thin 1/2 avocado diced 2 handfuls of arugula or spinach Shredded cheese for topping I used shaved Asiago, parmesan and Romano Dressing: Juice from half a lime A splash of Rice Vinegar or my favorite Champagne Vinegar  (you can purchase at Kroger) 2 tablespoons Olive oil  Salt and pepper to taste. Toss watermelon, radish and onion in a mixing bowl with the dressing.   Add arugula and avocado mix well. 

Tuscan Shrimp

  This recipe is one of my new favorites...I love Tuscan chicken,  so I thought about changing it up a bit with Shrimp.  I did not serve with pasta but feel free,  zoodles make a nice low carb option. Ingredients: 16 large shrimp peeled and deveined  🦐🦐 2 tablespoons butter 🧈  2 tablespoons chopped basil  2 cloves of garlic roughly chopped Small package of spinach stems removed and choppedπŸ₯¬ 1/2 pint of grape tomatoes πŸ…  Olive oil 1/4 cup of heavy cream πŸ˜‹  1/2 of shredded parmesan cheese πŸ§€    Place fry pan on stove on high heat add about tablespoon of olive oil and butter.   Add shrimp sprinkle with salt and pepper and brown on each side. Remove shrimp set aside and keep warm. Add garlic and  chopped basil stir and cook for a minute or two. Almost done.   Toss in tomatoes, spinach, cream, cheese and shrimp. Stir and cover pan turn off heat and let rest for 10 minutes. Enjoy!!!

Meatza Pizza

 So I decided to cut back on carbs and really wanted a pizza.  I've made the chicken crust before but just wanted something different.   So here it is my version of a Mestza Pizza.  My friend Debbie called it a smashed hamburger haha with toppings.  I call it a fantastic low carb bit of yummyness. Ingredients: 1 pound of lean burger  1 egg 1/2 cup of shredded parmesan cheese  1/4 cup of grated parmesan cheese  Fresh herbs 🌿   basil, oregano and parsley  finely chopped about a tablespoons of each give or take.  😁 Pinch of garlic powder and pepper. Toppings:  whatever your wanting.  Note:  for the sauce I used Rao's (no sugers) Pre heat oven to 325.  Mix all ingredients kinda like making Meatloaf.   Once everything is mixed well divided into 2 sections.  On baking sheet covered with parchment paper flatten the burger to a quarter inch pizza shaped like crust.  Repeat with 2nd half....

Homemade Enchilada Sauce for Chicken Enchiladas

 Made my own enchilada sauce this weekend..  it was extremely tasty. Very simple to make and tastes great. Ingredients: 2 tablespoons chili powder  2 teaspoons cumin 1 and half teaspoons garlic powder 1 and half  teaspoons dried oregano  6 tablespoons Olive oil  6 tablespoons flour 4 tablespoons tomato paste  32 oz of vegetable stock. Pinch of cinnamon 1/4 cube of bakers chocolate shaved 2 splashes of apple cider vinegar  Recipe:   Heat oil on medium heat until just sizzling,   add dried spices and flour.  Using a whisk blend into a roux.  Add tomato paste until smooth.  Cook about 4 minutes,   slowly add vegetable stock whisking to remove clumps,   cook over medium to low heat for 7 minutes stirring occasionally. Add cinnamon and shaved chocolate,  cook until blended 2 minutes or so.  Splash in the vinegar and set aside...sauce will thicken as it cools.   I used shredded c...

Potatoe Latkas topped with Fried Eggs and Hollandaise Sauce Paired with Cold Roasted Asparagus with Smoked Salmon

Wonderful recipe from Pans and Pandemic cook book..Potatoe Latkas.  Here's my twist  Super easy to make.   I  cooked them this morning for my breakfast and will cook them again!!! Ingredients: 3 shredded Potatoes  1/4 of onion finely chopped Salt pepper to taste  1 egg 2 pinches of baking powder  1 tablespoons of flour Oil for cooking.  Beat egg, flour, baking powder, salt and pepper in small bowl.  Once smooth add potatoes and onions stir until all potatoes are covered.  Heat about 1/2 to 3/4 cup veggie oil in deep sided fry pan on medium temp.  Add tablespoon of potatoes mixture to pan cook approximately 3 to 4 minutes per side or until golden brown.  Once done place on paper towel lined plate to drain.   

Spanakopita my Way

  A good friend of mine and fellow foodie Brian Gallagher sent me a cookbook.  Pots and Pandemic Cooking in Quarantine from the Congregation M'Kor Shalom.  First off this is a wonderful collection of shared recipes.  As soon as I recieved the cookbook I sat down a cup of coffee in hand and started flipping page after page of exciting recipes.   I love spinach cooked, raw or out of a can I even craved spinach with my second son Bryce.  So on page 3,  I found a recipe for Easy Spanakopita Appetizers by Beth Goodman super easy,  I kept turning then I found page 70 Spanakopita by Black Olive Restaurant.   So I decided to combine the 2...and here's my version...Thank you again Brian for sending me this great book!! Chicken Lasagna with Spinach Ricotta Cheese

  Wanted to make a noodless lasagna,  so this is my attempt.  Above is ingredients needed to make.  Note:  you do not need the large container of spinach or ricotta I only used half for this recipe saving the other half for another dish later in the week. Ingredients: 1 package of boneless skinless chicken breasts 1 jar of your favorite sauce 1 can of fire roasted tomatoes  1 package of baby spinach  1 small container of ricotta cheese  1 package of sliced provolone cheese 2 cups of shredded mozzarella cheese  2 eggs 1/2 cup of grated parmesan cheese  Olive oil  Seasonings: Italian Seasoning,  Garlic Powder,  Basil, oregano, salt pepper to taste.
