Oven Roasted Baby Broccoli

  New favorite veggie..  Baby Broccoli roasted in over at 350 for 20 minutes.    Purchase 1 bag of Baby Broccoli 🥦  Drizzle baking sheet with Olive Oil.  Arrange the broccoli in 2 layers.  Sprinkle with a pinch of sea salt,  a teaspoon of pepper and a pinch of garlic powder.  Drizzle again with Olive Oil.   Roast in a 350 degree oven for 20 minutes.   To serve sprinkle with parmesan cheese. 

Cheesy Hasselback Potatoes

  This recipe is NOT in any way low fat, low carb or low anything.  It's Butter Heavy Cream Cheesy Yummyness Potatoes.   Ingredients; 1/4 cup grated parmesan  1/4 cup shredded swiss cheese  A sprinkle or 2 of Cavenders All Purpose Greek Seasoning Pepper to taste 1/2 cup of Heavy cream  I  used 2 medium golden Potatoes,   peeled and sliced.  2 tablespoons butter softened. Preheat oven to 350 degrees,  in bowl toss cheese and Seasoning.   Add Heavy Cream and stir in the sliced Potatoes.  Mix until all Potatoes are covered.  Spread softened Butter in small baking dish.  With your clean hands stack Potatoes in baking dish,  pour remainder of the cheese mixture on top.  Push some of cheese between potatoes slices.  Sprinkle with some dried or fresh time.  Bake at 350 for 40  minutes,  check to see of Potatoes are soft if not bake additional 20 minutes until browned on top.

Easy Cabbage Soup with Ground Beef

  Love the Fall.  It's soup, stew and chili weather.  This is my version of the Cabbage Soup people use for diet.  Trust me it will cleanse the system 🤣  this one is super easy to put together; you can cook on medium and its ready in about 2 hours; you can speed it up by cook on high.   Or toss everything in crock pot 8 hours on low. Ingredients: 1 large can of diced tomatoes  1 packet on onion soup mix 1/2 head of Cabbage chopped 2 stalks of celery sliced thin 1/2 bag of baby carrots chopped 1/2 red and green pepper diced 1 bunch of kale chopped 1 large onion sautéed in 1 tablespoon of butter  1 pound of lean burger cooked About 3 cups of water Salt and pepper to taste    Note: you can omit for a veggies version.  You can add just about any cooked beef,  chicken, or pork. In a large stock pot add all ingredients stir.  The liquid level should be about inch below the veggies.  

Sauteed Shrimp & Spinach in a White Wine Cream Sauce

I was inspired to make this recipe from my friend and coworker Courtney Crush.   We were chatting earlier this week and she told me about a white wine cream sauce she made; so here's my version.  I did not serve this with traditional pasta I used Root Rebel 100% Plant Based Noodles.  Feel free to serve with your favorite pasta. Ingredients One pound of shrimp peeled in my goodness please devain it nobody likes seeing that dark line in shrimp 😁 One and a 1/2 tablespoons of extra Virgin Olive oil One shallot diced  3 cloves of garlic minced  A 1/2 a stick of butter I used Vermont  Creamery cultured butter with sea salt.  You can use regular butter Land Lakes store brand it really doesn't matter I just prefer the Vermont Creamery. 2 to 3 cups of spinach please please pull the stems off nobody likes eating them. 4 tablespoons of flour but I used Carbquick it's sort of like Bisquick but has very few carbs. 1 cup White Wine,  I used a nice Chardon...

Ratatouille with Sweet Italian Sausage

Another easy summertime recipe.  You can make this with or without sausage.  If you prefer beef it works too. Ingredients: 2 yellow squash sliced thin  2 zucchini sliced thin  4 roma tomatoes sliced thin 6 slices per tomato 1 pound sweet Italian Sausage  or ground beef.  Optional 1 med onion chopped 1 med red pepper chopped 1 large can of crushed tomatoes  3 garlic cloves minced  12 basil leafs sliced thin 4 tablespoons chopped oregano  4 tablespoons chopped parsley  1/2 tablespoons thyme 4 tablespoons Olive Oil Salt and pepper.  2 pinches of pepper and 1 of salt. Recipe: In medium fry pan cook Sausage or beef until browned.  Drain return to fry pan..  Add onion and pepper and cook for 3 minutes.  Add can of crushed tomatoes, 2 of the minced garlic cloves,   4 of basil leaves, 2 tablespoons oregano and parsley.  Salt and pepper.  Simmer for 10 mintues.   Remove from heat.  Alternate ...

Greek Chicken Burgess

I've made this recipe twice so far I've made burgers and I've made meatballs both times super yummy.  Again this one super easy to make. This will make 4 burgers.  Ingredients... One pound of ground Chicken 🐔  Half a cup of Feta cheese 🧀  1/4 cup of chopped red pepper 🌶  1/4  cup of chopped green pepper  1/4 cup of chopped onion 🌰  2 garlic cloves minced  A tablespoon of chopped fresh parsley  A tablespoon of fresh chopped oregano   4 mint leaves finally chopped Quarter teaspoon a pepper Mix all together make 4 patties and grill.   I served mine with A small salad and some of my pickled onions and cucumbers. If you're going to use this recipe for meatballs just double everything you can bake them in the oven at 350 for about 10 minutes place in crockpot to keep warm

Sweet & Hot Refrigerator Pickles

  A very simple recipe less than 10 minutes to whip together.   You'll need one medium sweet onion sliced thin, One English cucumber peeled and sliced.  1/4 cup rice wine vinegar with garlic.  2 shakes of dried hot peppers. 2 dashes of sesame oil maybe 3.  One quick - of onion powder, salt, pepper and 1 quick squeeze of Stevia. Combine the vinegar, oil and spices in small bowl. Layer onions and cucumbers in container.  Pour vinegar mixture over onions & cucumbers.  Secure lid and flip over couple times. Place in fridge.  Ready in as little as a hour but tastes even better tomorrow.  Serve with burgers, steak or pork chops.
