Sauteed Shrimp & Spinach in a White Wine Cream Sauce

I was inspired to make this recipe from my friend and coworker Courtney Crush.   We were chatting earlier this week and she told me about a white wine cream sauce she made; so here's my version.  I did not serve this with traditional pasta I used Root Rebel 100% Plant Based Noodles.  Feel free to serve with your favorite pasta. Ingredients One pound of shrimp peeled in my goodness please devain it nobody likes seeing that dark line in shrimp 😁 One and a 1/2 tablespoons of extra Virgin Olive oil One shallot diced  3 cloves of garlic minced  A 1/2 a stick of butter I used Vermont  Creamery cultured butter with sea salt.  You can use regular butter Land Lakes store brand it really doesn't matter I just prefer the Vermont Creamery. 2 to 3 cups of spinach please please pull the stems off nobody likes eating them. 4 tablespoons of flour but I used Carbquick it's sort of like Bisquick but has very few carbs. 1 cup White Wine,  I used a nice Chardon...

Ratatouille with Sweet Italian Sausage

Another easy summertime recipe.  You can make this with or without sausage.  If you prefer beef it works too. Ingredients: 2 yellow squash sliced thin  2 zucchini sliced thin  4 roma tomatoes sliced thin 6 slices per tomato 1 pound sweet Italian Sausage  or ground beef.  Optional 1 med onion chopped 1 med red pepper chopped 1 large can of crushed tomatoes  3 garlic cloves minced  12 basil leafs sliced thin 4 tablespoons chopped oregano  4 tablespoons chopped parsley  1/2 tablespoons thyme 4 tablespoons Olive Oil Salt and pepper.  2 pinches of pepper and 1 of salt. Recipe: In medium fry pan cook Sausage or beef until browned.  Drain return to fry pan..  Add onion and pepper and cook for 3 minutes.  Add can of crushed tomatoes, 2 of the minced garlic cloves,   4 of basil leaves, 2 tablespoons oregano and parsley.  Salt and pepper.  Simmer for 10 mintues.   Remove from heat.  Alternate ...

Greek Chicken Burgess

I've made this recipe twice so far I've made burgers and I've made meatballs both times super yummy.  Again this one super easy to make. This will make 4 burgers.  Ingredients... One pound of ground Chicken πŸ”  Half a cup of Feta cheese πŸ§€  1/4 cup of chopped red pepper 🌢  1/4  cup of chopped green pepper  1/4 cup of chopped onion 🌰  2 garlic cloves minced  A tablespoon of chopped fresh parsley  A tablespoon of fresh chopped oregano   4 mint leaves finally chopped Quarter teaspoon a pepper Mix all together make 4 patties and grill.   I served mine with A small salad and some of my pickled onions and cucumbers. If you're going to use this recipe for meatballs just double everything you can bake them in the oven at 350 for about 10 minutes place in crockpot to keep warm

Sweet & Hot Refrigerator Pickles

  A very simple recipe less than 10 minutes to whip together.   You'll need one medium sweet onion sliced thin, One English cucumber peeled and sliced.  1/4 cup rice wine vinegar with garlic.  2 shakes of dried hot peppers. 2 dashes of sesame oil maybe 3.  One quick - of onion powder, salt, pepper and 1 quick squeeze of Stevia. Combine the vinegar, oil and spices in small bowl. Layer onions and cucumbers in container.  Pour vinegar mixture over onions & cucumbers.  Secure lid and flip over couple times. Place in fridge.  Ready in as little as a hour but tastes even better tomorrow.  Serve with burgers, steak or pork chops.

Baked Eggs in a Spinach & Onion Cream Sauce topped with Prosciutto and Parmesan

Saw several recipes online for baked eggs for baked eggs but nothing I saw made me  want to make the recipes.  So I decided to come up with one on my own.  This recipe is super simple to make it look like you spent tons of time in the kitchen.   Another bonus is it tastes awesome.  Really hope you try and let me know what you think. So we'll start with ingredients,  I love onion so I probably used a quarter cup of chopped onion you can tweak it to whatever you like.  Next is chop spinach  I  used about a 1/2 a cup.  One slice of prosciutto chopped you can substitute bacon for this part I would probably cook up 4 pieces of bacon for 2 servings.  4 tablespoons of heavy cream  Two eggs  Pepper do not add salt there is tons of salt in your bacon and tons of salt in your prosciutto of as well as your parmesan cheese  2 pinches of  Shredded parmesan cheese.  Let's put it all together.  Is heat your oil i...

Watermelon Avocado Salad

Here we are in the deep heat of Summer πŸŒ•πŸŒž,  and you know what is awesome this time of year Sweet Watermelon πŸ‰.    Not only is this a Low carb salad its also satisfying and  pairs well with grilled shrimp or fish.  Try my twisted version .   This recipe serves 2 Ingredients  1 cup of cubed watermelon  1 radish sliced thin 1 shallot diced or 1/4 of red onion diced 4 mint leafs πŸƒ  sliced thin 1/2 avocado diced 2 handfuls of arugula or spinach Shredded cheese for topping I used shaved Asiago, parmesan and Romano Dressing: Juice from half a lime A splash of Rice Vinegar or my favorite Champagne Vinegar  (you can purchase at Kroger) 2 tablespoons Olive oil  Salt and pepper to taste. Toss watermelon, radish and onion in a mixing bowl with the dressing.   Add arugula and avocado mix well. 

Tuscan Shrimp

  This recipe is one of my new favorites...I love Tuscan chicken,  so I thought about changing it up a bit with Shrimp.  I did not serve with pasta but feel free,  zoodles make a nice low carb option. Ingredients: 16 large shrimp peeled and deveined  🦐🦐 2 tablespoons butter 🧈  2 tablespoons chopped basil  2 cloves of garlic roughly chopped Small package of spinach stems removed and choppedπŸ₯¬ 1/2 pint of grape tomatoes πŸ…  Olive oil 1/4 cup of heavy cream πŸ˜‹  1/2 of shredded parmesan cheese πŸ§€    Place fry pan on stove on high heat add about tablespoon of olive oil and butter.   Add shrimp sprinkle with salt and pepper and brown on each side. Remove shrimp set aside and keep warm. Add garlic and  chopped basil stir and cook for a minute or two. Almost done.   Toss in tomatoes, spinach, cream, cheese and shrimp. Stir and cover pan turn off heat and let rest for 10 minutes. Enjoy!!!
