Tomato Onion Spinach Quiche

  Quiches are the one of the easiest dishes  to make. You can add just veggies  or combination of meats and veggies or seafood if you like..  I've  thinking about quiches for while now...this one is the 2nd I've made in the last week.     Recipe: 1 pie crust  6 eggs 1/2 cup of half and half  1 cup of Cheddar Cheese grated 1 cup of Parmesan Cheese grated Salt and pepper 2 tablespoons fresh basil leaves sliced thin 2 roma tomatoes slices 1 small onion chopped fine 2 cups of sauteed spinach Preheat oven to 375,  spary pie dish with Pam roll out pie crust and place in pie dish.   Layer the following,  Cheddar cheese, onions, spinach Parmesan cheese and tomatoes.   Sprinkle with basil.  Mix eggs and half and half in a bowl add pinch of salt and pepper.  Evenly pour over the veggies.  Bake for 30 to 40 minutes or until set.

Venison Lasagna using Zucchini for Noodles

We are getting ready for hunting season so we have to use up all the meat in freezer.  For my friends that do not hunt or think venison tastes gamie use regular ground beef.  I am making and baking for this weeks dinners.  Lasagna always tastes better the second day. Recipe: 1 to 2 pounds of ground venison, we like it meaty  1 small onion chopped  4 mushrooms sliced thin Optional  1/2 tablespoons of chopped garlic  1 jar of manarinara sauce Rao's is good very low sugar. 1 can of roasted tomatoes 3 shakes of Italian Seasoning  Salt and pepper to taste  1/3 cup of grated parmesan cheese  3 to 4 zucchini's sliced thin 1 and 1/2 cup ricotta cheese 1 egg 2 cups of mozzarella cheese Pinch of garlic powder  1 tablespoons Italian Seasoning  Start by cooking meat, chopped onions, mushrooms and garlic until done.  Open jar of sauce and can of tomatoes add them to a medium size mixing bowl,  pinch of salt and pepper.  Mix i...

Sausage Gravy Bread Pudding

Okay these idea came from a friend of mine,  he didn't like the Pumpkin Cheesecake Bread Pudding recipe and jokingly said Could you make Sausage Gravy Bread Pudding?   Well the wheels in my brain began thinking of how to pull this off.    So here goes. Recipe: 1 and 1/2 cups of sausage gravy,  you can find recipe in past posts. 6 slices of brioche bread cut into 1 inch pieces 4 eggs  1/3 cup half and half Salt and pepper to taste  A pinch of ground red pepper A pinch of onion powder  Spray pie dish with Pam,  add cut up bread.  Mix eggs with milk and spices.    Pour of bread and let it soak up for about 15 minutes.   With a large spoon make divots see picture below in the soaked bread.  When sausage gravy is good and thick spoon into the open spaces.  Bake in 350 oven for 20 minutes,  remove and sprinkle shredded cheese of your choice and return to oven until cheese melts...  yummy Fresh out o...

Fried Potato Corn Chowder with Shrimp

Its that time of year again for soups, stews, chili and chowder.  I made this recipe last year for the first time for a soup day at work.  It went over so well it is part of my cool weather comfort dinners.  I usually make this if I have leftover mashed potatoes.  If you don't want to make a batch or just want to save time use the ones from the fridge section at the grocery store..this tastes better the second day. Recipe: 1 onion chopped 8 potatoes peeled and cut into small pieces 4 ears of corn roasted in oven,  cut off the cob 4 cups whole milk 2 cups water 1 package of mashed potatoes from the fridge section at grocery store.  2  tablespoons powder chicken bouillon 1/4 cup of sherry 4 tablespoons butter 2 pounds of med shrimp peeled, cut in half.  1 cup shredded swiss cheese Sautee the onions in 1 tablespoon of butter until soft.  Add cooked onions, milk, mashed potatoes,  bouillon, and corn to Dutch oven or Crockpot turn on low. Spinach Caprese Stuffed Portabella

This dish is great for a meatless meal. Lots of flavors to satisfy your taste buds. I love everything about this one. Recipe: 4 large portabella mushrooms cleaned 1 oz package spinach sautéed  1 cup of shredded mozzarella cheese 1 package of grape tomatoes cut in half Fresh mozzarella cut into 1/4 inch pieces Garlic powder to taste Pepper to taste Balsamic reduction this can be found in with the varieties of vinegar at grocery store. Preheat over to 425,  cover baking sheet with foil.  Place mushrooms on baking sheet, sprinkle with garlic powder,   add 1/4 cup of cheese to each mushroom.  Evenly divide cooked spinach between the mushrooms, spinkle with garlic.  Place tomatos on top of spinach and add the mozzarella.  Sprinkle with pepper. Bake for 10 to 15 minutes,  drizzle Balsamic Reduction over and serve warm.

Pumpkin Cheesecake Bread Pudding with a Hot Kahula/Rum Butter Sauce

 Oh this is awesome dessert,  make this on the fly last night.  Another simple to make yummy dessert.  Taste of fall,  this would be great for the holidays.  Recipe: 1 loaf of brioche bread cut into 1 inch pieces.  I put them in a warm oven to remove some of the moisture.  200 for 15 minutes  5 eggs 1 small can of pumpkin  1 can of evaporated milk 2  teaspoons pumpkin pie spice 1 teaspoon of vanilla  4 tablespoons melted butter  1 cup chopped walnuts Cheesecake recipe: 1 block cream cheese 1/2 cup of sugar 1 egg 1 teaspoons vanilla  Spray 9 x 13 pan with PAM,  add chopped brioche cubes.  Mix pumpkin, eggs, milk, butter, spice and vanilla stir until well blended.  Pour over the bread cubes. Mix cream cheese, egg sugar and vanilla until creamy.  Drop tablespoons of cheese mixture into the pumpkin bread.  I spaced mine every couple of inches.  Sprinkle walnuts and bake at 325 for 40 minutes....

Chicken Salad with Walnuts & Grapes

Super simple and easy to make.   If you don't like walnuts you can use pecans or just omit them all together.  I used green grapes this go around but red ones are just as good.  I taste them in store to make sure I get the sweet ones 😁 Recipe: 1 rotisserie chicken,  cooled picked from bone and chopped. 1 small onion diced small 2 stalks of celery chopped  20 plus grapes cut  half and chopped again 1/2 cups of walnuts chopped 2 to 3 tablespoons Honey,  my favorite is Wildflower Honey Bubba's Sweet Nectar from Waynesboro VA Salt and pepper to taste  Start with half cup Mayo. Sausage Gravy...

Weekends are made for big breakfasts.   Theres nothing better than homemade sausage gravy over biscuits or in my case home fries and eggs.  This recipe is simple, easy to make and will fill you up.    Recipe: 1 pound of sausage,   I like the Country Sausage if not available I like to use Bob Evans sausage.  Its your choice. 2 tablespoons of unsalted butter  1 pinch of sage 1 pinch of salt 2 teaspoons pepper Wondra flour.  Really can't tell you exact measurements. Whole milk Optional:  1/2 diced onion.  Think I add onion to just about every savory thing I make.  In a medium pan heat turned on to high add sausage and butter.  Use a wooden spoon to break up the sausage.   Add onions if you want them,  sage, salt and pepper.  Cook until sausage is done.  Sprinkle  flour and stir until all the sausage is covered and butter/grease is soaked up.  I am thinking 1/4 to 1/3 cup.  Guessing...

Sweet and Hot Six Pepper Salsa

Again my family Loves Salsa!!!   I followed my recipe for Hatch Chili Pepper Salsa 🌶 just added a few more peppers and sugar.  Peppers are left to right Anaheim, Habanero, Hot Hatch Chilies, Hungarian Wax Hots, Jalapenos and Green Peppers.  Increase the sugar to a cup and half.  This one is HOT!! 

Spiced Chicken Stuffed Shells with Garlic Bread

I just love pasta!!  One day I will make my own fresh pasta;  for now I will rely on store bought.  My combination of spices may seem a bit odd but I can say they worked very well together.  This dish tastes even better the next day. Recipe: 1 box of shells for stuffing,   I wanted manicotti shells but the store didn't have them so I found a ell shaped shell that would work. 1 pound of ground chicken  1 medium onion chopped small 8 oz of portabella mushrooms diced 1 package of spinach 1 clove of garlic minced  1 teaspoon cinnamon 1 teaspoon red pepper flakes  8 oz of ricotta cheese 2 cans of fire roasted tomatoes  2 teaspoons Italian Seasoning 1 clove of garlic crushed  1/2 cup of half and half  Salt and pepper to taste  1 bag of mozzarella cheese shredded. 8 oz Start with a bowl of warm water,  place you shells in to start the softening process while you are getting the filling and sauce finished. My Very Little Filler Maryland Crab Cakes

For the best flavor and texture of Crab Cakes use lump crab meat.  I get mine at Sam's.  Baking the Crab cakes in a hot oven with real butter will make them melt in your mouth.  I've made this many times so I eyeball the measurements. Recipe: 1 large egg 1/4 cup of mayo. Hellmans.  1 tablespoon fresh chopped parsley  2 teaspoons dijon mustard 2 shakes of worchestershire sauce 2 shakes of Old Bay seasoning Juice from 1/2 a lemon 1 lb lump crab meat 14 Club or Ritz crackers crushed. Note:  ONLY 14 no more or less. 2 tablespoons melted unsalted butter  In a medium bowl mix egg, mayo, parsley,  mustard,  worchestershire, Old Bay and juice of 1/2 lemon.  Stir until all is mixed together well. Dump crab meat on top,  pour cracker crumbs on top of crab and gently fold together.  Try not to break up the crab meat.  Cover and place in fridge.   30 minutes minimum up to 1 day.   Preheat oven at 450,  cover b...
